Our hand made fudges are made right in the shop almost everyday, the same way that Dougall and Di did when they opened the Fudge House over 25 years ago. When Dougall taught Mick & I how to make Chocolate Fudge (one of our most popular flavours) it all seemed so simple… how wrong we were!
Even though we make it every week I have struggled with Chocolate almost as much as Coconut Ice.
The real trick to making amazing Chocolate is, of course, using really good quality chocolate and lots of it!
However, the melted chocolate adds moisture that can stop the fudge from setting, and thus the problem! Having said that the feeling of complete satisfaction when you pop the perfectly set rich chocolate fudge out of a mould, ready for cutting, packaging and sharing is well worth the effort!
